Ingredients
- 3 eggs, beaten
- 1 thick strip of bacon
- 1/4 Cup red onion, finely diced
- 3/4 Cup frozen chopped spinach
- 3 Tbsp (1 slice) swiss cheese, thinly sliced
Hardware
- Medium-large non-stick skillet
- Microwave
Directions
- Cook bacon strip in skillet over medium heat (approx 5 minutes). Meanwhile, defrost spinach in microwave.
- Remove bacon, let rest, then dice. Add onion to skillet & cook in bacon fat until translucent (2-3 minutes).
- Add spinach and bacon. Cook for 1-2 minutes.
- Add eggs, cook for 2-3 minutes, until mostly done. Add cheese and cook until eggs are done. Serve immediately.
Optional, untested
Minced garlic or garlic powder.

Story
During Austin's "Stay Home, Work Safe" order, day 20, we decided to do something with our three remaining eggs for breakfast. We usually opt for two eggs per person, so we knew we had to make things a bit more substantial. This is definitely a case of "whatever is on hand" but turned out really wonderful.
The "Holy Post" part of the name is because we were listening to the Holy Post Podcast at the time, and wanted to commemorate the day.
