Pizza/Pasta Red Sauce

Servings: sauce for  12" pizzas (approx.) (original: 6) or 8 pasta servings (approx.)
Time after ingredient prep: 1 hour
Ingredients
  • 2 Tbsp olive oil
  • 1/2 yellow onion, diced
  • 2 garlic cloves, minced
  • 28 oz. peeled tomatoes (in can)
  • 16 oz unsalted tomato sauce
  • 1 tsp tomato paste (optional)
  • 1 tsp dried oregano OR 1 Tbsp fresh oregano
  • 1 tsp dried basil OR 1 Tbsp fresh basil
  • 1/2 tsp pepper
  • 1 tsp kosher salt
Hardware
  • Large pot
  • Kitchen scissors
Directions
  1. Sauté garlic and onion in olive oil over medium-high heat until fragrant and translucent (2-3 minutes). Meanwhile, with kitchen scissors, cut peeled tomatoes in can (or, can wait until in pot if easier) until in small, manageable pieces (can leave larger if making for pasta).
  2. Add remaining ingredients. Bring to a boil, uncovered. Reduce heat and simmer on low to medium-low heat for 45 minutes.

Story
Pasta and pizza sauce are a little hard to come by at the moment in this quarantine, at least at our HEB. I'd made marinara once before, but it turned out way too salty. This one turned out great, works for pizza, pasta, dipping sauce.
